Thirsty Thursday: Dreaming of the Islands in Winter Martini + Blue Chair Bay Rum

I had a little run-in with Santa this morning, on the way to the Apple Store.

First off, I wanted to thank all of you for the love and well-wishes you gave me on my birthday, yesterday, via texts, calls, email, Facebook, Instagram..I love social media!  You really know how to make a girl feel special.  We had a great time celebrating with my parents and Sister #6 last night.  I think I’m going to order this more often, but basically I got a skinny margarita, and then got the bartender to muddle jalapenos in it, to spice it up a bit.  It was delicious, especially mixed with the salted rim!  Alright, speaking of cocktails…
 I have partnered with Blue Chair Bay Premium Rum to create this Thursday’s tasty cocktail.  It’s a new rum, inspired by the island life of singer/songwriter Kenny Chesney.  They sent me a bottle, asked me to create a signature SSP cocktail recipe with it, and offered to give one away bottle away, to one lucky reader.
The idea behind Blue Chair Bay…”these are the rums born on the beach, distilled on the beach, and aged in barrels right on the water.”
I’ve always been a huge fan of pina coladas, so I knew I wanted to create the same taste, but make it a little more festive, for this time of year.  In order to do that, I garnished it with a candy cane, to add a hint of peppermint to the smooth mixture of the pineapple juice and orange juice, with the spiced coconut rum.  I think Kenny Chesney would approve my “beachy” martini.  My goal was also to make the cocktail super simple, so anyone could create the cocktail with what they probably already have in their fridge/pantry.
Without further ado, here’s my concoction…
Gold Confetti Martini Glass (on sale, not available online, but I love these)
Dreaming of the Islands in Winter Martini
Ingredients
1 cup Ice
1/4 cup Blue Chair Bay Spiced Coconut Rum
2 tbsp Orange Juice
2 tbsp Pineapple Juice
2 tbsp Coconut Water
2 Dashes of Cinnamon
For garnish, if desired…
Miniature Candy Cane
Cherries
Fill shaker with ice, rum, orange juice, pineapple juice and coconut water.
Add a few dashes of cinnamon.
Shake and strain into a martini glass.
Garnish with candy cane and two cherries.
Enjoy!

  1. Favorite drink changes so often. Usually either a Dirty Shirley or good old fashioned pinot noir 🙂 With rum though, I'd probably go rum/pineapple juice, hint of cherry juice

  3. The mojito is my favorite rum drink. But I just used rum in a batch of egg nog. I even made a chocolate cake with chocolate rum icing recently.

  4. My favorite summer drink is coconut rum with fresca!! Ever since I found out about my Favorite country singer Kenny Chesney coming out with his own line of rum, I have been dying to get my hands on a bottle! Anything with RUM has been my go to drink even in the winter! So I will definitely be making this concoction with friends and family!! Thank you doll!! Go DAWGS! Born and raised! I do have a winter drink which is bourbon and ginger! Good stuff right there!

  6. I love this drink called the Caribou Lou. It has 151 rum, Malibu, and pineapple juice it's very easy and tastes awesome! The Blue Chair Coconut Rum would be a great substitute for the Malibu!!

  10. First read pineapple as peppermint and was really confused/intrigued as to what this concoction would taste like.

    My fave drink is a classic G&T; or a fresh fruit margarita. Depends on the occasion 🙂
