Pineapple Margarita + Favorite Essie Colors

Cheers to summer with me, with this yummy cocktail I found via Ina Garten (The Barefoot Contessa)… // Pineapple Cups // Essie Polish in Marshmallow
Pineapple Margarita
Yield: 8 Cocktails
Ingredients
2 cups lime juice, about 20 limes
2 cups white tequila
2 cups Triple Sec
2 1/2 cups fresh pineapple juice
Fresh pineapple slices, for garnish
Combine the lime juice, tequila, Triple Sec, and pineapple juice.
Fill a cocktail shaker 1/2-way with ice and fill 2/3 full with the margarita mixture.
Shake for 30 seconds and pour into glasses.
Decorate with fresh pineapple slices and serve ice cold.
*I’d probably still salt the rim.  The perfect combo of savory and sweet!

We’re still at the beach and having a great time.  Last night there was a beautiful full rainbow over the ocean in between evening storms.  We missed it in person, but loved seeing everyone’s pics of it.

A reader requested that I share my favorite Essie colors, seeing as I do wear them all the time.  In the past four years, I’ve had maybe three professional mani/pedis, but when I apply it, it always seems like it stays on better.  My tricks to making the polish last longer would be cutting them super short and applying this Good to Go topcoat.  Looking at some of these colors, I feel like I need to pull out some of my favorite oldies but goodies, like Mint Candy Apple.  Such a fun color!

I picked up this polish the other day and can’t wait to try it!  It’s a pretty pink called Berried Treasures from Essie’s latest summer collection.

  1. I am so addicted to Essie polishes, I had to get a little holder from the container store and I still have to keep the ones that aren't "in season" in my bathroom cabinet! I never get them professionally done either though, so that makes it easy to justify the cost, haha!

  2. Great Essie choices! I'm also an Essie lover and so many of these are on my favorites list, too. If you like Fiji, you might try Peak Show. It's a really light pink but a bit more opaque and covers better than Fiji. Great for summer!
