How I Do It: No-Bake Energy Bites

First off, can I just share my new recent discovery with my most favorite appliance ever?  I dumped an entire canister of unroasted peanuts – that’s it – into my Vitamix (now on sale)…
…and this is what happened…
Creamy Peanut Butter!  I’m still in shock.  I mean I knew this mixer was cool, but that it really can do something like this is purely awesome!  I’ll be sure to share more Vitamix discoveries like this when I read more of the cookbook.  P.S. Thanks for all of the suggestions on Instagram yesterday.  Can’t wait to try those too!
Alright, now back to the recipe.  So I was at a playdate last week and my friend had these snacks.  She was kind enough to share the recipe with me.  They really do give you energy and are super healthy!
No-Bake Energy Bites
Servings: 24, Calories: Approx. 100 calories per ball
1 Cup Oatmeal
1/2 Cup Peanut Butter (or other nut butter)
1/3 Cup Honey
1 Cup Coconut Flakes
1/2 Cup Ground Flaxseed (I used Chia Seeds)
1/2 Cup Chocolate Chips
1 Tsp Vanilla

Mix all ingredients together and form into tablespoon-sized balls.

Refrigerate a few minutes before indulging.
Enjoy!
